My version of the viral One Pot Lasagna Soup Recipe

If you’re anything like me, your Instagram feed is basically a parade of mouth watering food pics. 🍔🍰 One day, I stumbled upon this viral recipe that basically hijacked my cravings for days on end. So, obviously, I couldn’t resist—I had to give it a shot!

Now, picture this: I’m a busy mom juggling a million things, so when it comes to cooking, I’m all about quick and easy. Give me a recipe that doesn’t need a Ph.D. to make and uses stuff I already have in my kitchen, and you’ve got my attention. And guess what? This recipe absolutely nailed that criteria.

Scrolled through a bunch of versions on Instagram Reels, and finally settled on what seemed like the easiest. Plus, bonus points for most of the stuff being things I could just grab from my fridge or pantry. No frantic grocery store dashes, thank you very much.

So here’s my take on the viral one pot lasagna soup recipe: 


  • 500g regular beef mince
  • 1 brown onion finely chopped
  • 3 garlic cloves finely chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 500g jar tomato pasta sauce
  • 1 litre chicken stock
  • ½ cup thickened cream
  • 350g pack lasagna sheets
  • Italian seasoning
  • 1 cup Finely shredded Parmesan cheese
  • 1 cup Shredded Mozzarella cheese
  • 1 teaspoon sugar
  • Salt and freshly ground pepper to taste


  1. In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat if needed.
  2. Add chopped onion to the pot and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional 1 minute.
  3. Pour in the tomato paste, tomato sauce and chicken stock. Season with Italian seasoning blend, sugar, salt and pepper. Stir well to combine.
  4. Bring the mixture to a simmer, then pour in the thickened cream. 
  5. Add the broken lasagna sheets and continue to simmer, stirring occasionally, until the lasagna sheets are cooked and tender, usually about 10-15 minutes.
  6. Add the parmesan cheese and mozzarella cheese, then stir to combine. 
  7. Garnish the soup with fresh basil or parsley and a sprinkle of grated Parmesan cheese.
  8. Enjoy your one-pot lasagna soup with some crusty bread or garlic bread on the side.
